Pimento Cheese Potato Skins have bacon, roasted red peppers, that top the pimento cheese stuffed potato skins. Could it get any cheesier? Of course, it can. When you think it has too much cheese, add just a bit more and that may be enough! But if you are like me, there is no such thing as too much cheese!

Forkin Recipes has created a terrific recipe that can be served as a side, an appetizer or even as a meal. Since I am a Southerner, Pimento cheese is a cheese spread that I grew up eating and loving! Now with this recipe, I have a whole new reason to make and enjoy pimento cheese!

  • 6 Medium Sized Russet Potatoes

  • 3 Tablespoons of Melted Butter

  • Kosher Salt and Pepper

  • 8 Ounces of Cheddar Cheese

  • 2 Ounce Softened Cream Cheese

  • 1 Teaspoon Red Pepper Flakes (Crushed)

  • 1 Roasted Red Bell Pepper, Chopped into 1/4-inch

  • 4 Slices Bacon, Cooked Crispy and Crumbled

  • 3 Tablespoons Chopped Chives

  • 1/2 Cup Sour Cream (Optional)
